Berry & Spinach Tofu Smoothie
YIELD: 2 large cups PREP TIME: 10 TOTAL TIME: 10INGREDIENTS:
1/2 cup silken tofu1 cup mixed berries (strawberries, blackberries, raspberries and blueberries)
2 large handfuls of spinach
1 Tbsp parsley
1/2 Tbsp agave nectar or honey
1 banana
6 ice cubes
1/2 cup milk (optional, added for creamier consistency)
DIRECTIONS:
Blend the parsley and spinach in a blender or food processor. Add the ice cubes, berries and banana; blend together.Add the tofu and mix until combined. Add 1/2 cup of milk if the consistency is too thick and continue to blend. Omit the milk if you find the consistency to your liking. Replace milk with almond milk if you eat a vegan diet.
Sweeten the smoothie with the agave nectar or honey.
