Watermelon, Pineapple and Peach Smoothie

Ingredients

2 cups chopped seedless watermelon
1 cup crushed pineapple, drained well
2 cups peach yogurt
1 dash ground cinnamon
1/2 teaspoon vanilla extract

Instructions

Blend ingredients together in a blender until smooth and serve immediately.

Serves 2.

*** Make Your Favorite Pancake Batter

Good Old Fashioned Pancakes Recipe

1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted

Directions

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

(need green food coloring for turtle shell. also need some squeeze jars to put some pancake batter in to make create shapes easily on the griddle)

It's Monday's Breakfast

Scramble Eggs with Smoked Salmon

Ingredients

1/4 pound sliced smoked salmon
12 eggs
1/2 cup heavy cream
Salt and freshly ground black pepper
2 tablespoons butter
12 to 15 blades of fresh chives, finely chopped

Directions

Reserve 2 slices of salmon for garnish. Chop the remaining salmon into very small pieces.

Whisk your eggs and cream together. Add 1/2 of your chopped chives and season eggs with salt and pepper. Preheat a large nonstick skillet over medium heat. Melt butter in the pan and add eggs. Scramble eggs with a wooden spoon. Do not cook eggs until dry. When eggs have come together but remain wet, stir in chopped salmon. Remove pan from the stove and place on a trivet. Garnish the eggs with remaining salmon and chives and serve right out of the warm pan.

CRUMPETS

Ingredients

1 1/2 cups milk
1 1/2 teaspoons sugar
1 1/2 teaspoons baking yeast
3 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
3/4 cup water

Directions

Heat milk until just warm - too hot and it will kill the yeast. Stir in sugar, yeast, flour, and salt. Whisk till smooth. Place in warm oven to rise (I always raise bread in a warm oven - heated to no more than 170. Turn the oven off before putting the bread in and set the time for 25-30 minutes - instead of the hour- hour and a half that's often recommended for rising time; it's never failed.) After 25-30 minutes, stir baking soda into 3/4 cup of water and whisk into mixture.

Melt butter on a griddle or in a large skillet. Spoon batter into molds. I used greased, wide-mouth jar lids. You could also save small cans for this (tuna size), from which you've opened both ends with a can opener. Or you could buy so-called "egg molds." Free form works, too, but they're not quite as pretty.

Flip them when bubbles begin to form on top (2 minutes or so) and bake on the other side for no more than a minute or 2.

Serve with butter and marmalade and the Sunday paper.
