We call "Mexican" food "Interior Mexican", which is very mild. San Antonio came up with "Tex-Mex" with the spicy chimichangas, tacos, burritos, pico di gallo, and other stuff. Just stay away from the Habanero peppers. Jalapenos are normal "heat" here.

Since Mexico was FIGHTING the Spanish at the time, they possibly picked up another dialect. I know it sounds different than South American Spanish. My wife was in Bolivia many years ago, and it's different. Cuba speaks "machine gun" Spanish which goes very fast.

In Texas, we have to mangle it. Guadalupe=Gwadaloop
Menchaca=Manchaca=Man Shack

it´s plain & simple spanish, i speak like this every day!!!!!!!!! haha
