Fennel-Kumquat Quinoa Salad
Fennel-Kumquat-Quinoa Salad Recipe Link
1 cup of cooked quinoa
Sauté: 1/2 yam or sweet potato diced and
1/2 red pepper diced
5 kumquats thinly sliced
A few Tbsp. of fresh fennel
1 Tbsp. olive oil
1 splash of Red Wine Vinegar (less than a tsp.)
A pinch of salt and pepper
Don’t forget to add your protein- grilled chicken or sliced boiled egg whites go great with this!
