Recipe Palette Fun Challenge
Chocolate Kahlúa Cream Pie
Ingredients:
1 cup chocolate wafer crumbs
¼ cup pecans, ground fine
½ stick butter, melted and cooled
2/3 cup plus 2 tablespoons sugar
¼ teaspoon cinnamon
2 tablespoons cornstarch
4 large egg yolks
2 cups milk, scalded
3 tablespoons Kahlúa
2 ounces unsweetened chocolate, chopped
For the topping:
2/3 cup well-chilled heavy cream
1 tablespoon sugar
1 tablespoon Kahlúa
1-2 tablespoons shaved chocolate for garnish
Method:
Preheat oven to 350 degrees.
In a bowl, combine well the wafer crumbs, pecans, butter, 2 tablespoons of sugar and the cinnamon.
Pat mixture into 9” glass pie plate and bake for 10-12 minutes until set.
In a bowl, whisk together the remaining 2/3 cup sugar, cornstarch and egg yolks and whisk in the milk, scalded.
In a heavy saucepan, bring the custard to a boil over moderate heat, whisking and simmer it, whisking for 2 minutes.
Whisk in the Kahlúa and chocolate until the mixture is smooth.
Pour into pie shell, smoothing the top.
Chill the pie with its surface covered with plastic wrap for at least 6 hours.
Make the topping:
In a chilled bowl with chilled beaters beat the cream until it holds soft peaks, beat in the sugar and Kahlúa and beat topping until it holds stiff peaks.
Spread the topping over the pie.
Sprinkle with shaved chocolate.
Cinnamon Apple Pie
Ingredients:
8 Apples
500 gr. Short Pastry
2 Cups Lemon juice
1 Cup Sugar
2 Tbs Butter or Margarine
1 Tbsp of Flour
1/2 teaspoon Cinnamon
Milk or Liquid Whipped cream
Nutmeg
Recipe:
The quantities proposed by the recipe are enough to prepare one double "crust" of pastry.
Peel apples, cut thin, sprinkling with a cup and half of lemon juice.
In a large bowl, put a cup of sugar, a tablespoon of flour, a pinch of nutmeg, half teaspoon of cinnamon, adding all to the apples.
Leave to rest while you prepare the pastry pie or overnight
Place half pastry in a baking-pan , put the apples on, making a heap in the centre.
Pour the remaining lemon juice.
Sprinkle with butter or margarine flakes. Set the superior crust, cutting out a sketch to the centre.
Seal the two discs.
Brush the superior surface with milk (or with whipped cream) and sprinkle it with other sugar.
Cook for 10 minutes in hot oven.
Reduce the heat and still cook for at least 40 minutes.
I just get sooooo hungry when I roam here - I need to abstain myself.

I found the food fight challenge a little tricky at first, but came up with this solution. Let me know what you think.

Cream Cheese Mints
(YUM!)
Ingredients
1 (3 ounce) package cream cheese, softened
1 tablespoon butter, softened
3 cups confectioners' sugar
2 drops peppermint oil
any color food coloring paste (optional)
Directions
1.In a large bowl, combine cream cheese, butter, and confectioner's sugar. Mix in peppermint oil. Color as desired with food coloring paste, or leave white.
2.Roll mixture into small balls, and place on waxed paper. Flatten with a fork dipped in confectioners' sugar. Let dry for about 2 hours on waxed paper, then freeze or refrigerate.
