Serves 4

‘LONG PIG’ STROGONOFF WITH FAVA BEANS

This recipe is excerpted from ‘Home Cooking with Hannibal’ by Hannibal Lecter (aka; some nasty little corner of my own imagination)

Ingredients:

25g (1oz) butter
450g (1lb) Long pork fillet, cut into strips
1 Large red onion, sliced
1-2 Large garlic cloves, finely chopped
1 Medium ripe tomato, finely chopped
2 tsp Black peppercorns, freshly ground
2 tsp French mustard
1 tsp Smoked paprika
100g (4oz) Mushrooms, quartered
300ml (1/2 pint) Soured cream
100g (4oz) Fava beans, halved and cooked
Salt to taste

Method:

1. Melt the butter in a large frying pan along with the garlic and then add in the pork and onion and fry for 8-10 minutes.

2. Add the chopped tomato and fry gently for a further1-2 minutes

2. Add the Black Peppercorns, paprika, mustard and mushrooms and cook gently for 3 minutes.

4. Stir in the cooked fava beans and soured cream and heat through without boiling. Season to taste.

Serving suggestion

Serve on a bed of wild rice with a good Chianti
